  • Potatoes (peeled and diced)

  • White Monterey Jack Cheese

  • Yellow Corn Meal

    1 cup
  • Sunflower Oil

Cooking Directions:

Wash peel and dice the potatoes in large pieces. Boil in abundant water for about 20 minutes. When ready, drain well the potatoes and mash them to obtain a homogeneous cream.

Mix the obtained cream with the finely chopped onions and the white Monterey jack cheese shredded in small pieces. Let cool a little until you can work the patties with your bare hands.

With the help of your hands obtain small patties of potato dough about as big as your palm.

Coat the potato patties in corn meal and fry them in sunflower oil.

When the potato patties become golden and crusty, remove from the oil and let rest on a paper towel to drain the oil in excess.

Serve hot with your favorite dip sauce as a side. Delicious.
