Ingredients:

  • Spinach (fresh)

    2 lb
  • Potatoes (medium)

  • Unsalted Butter

    2 tbsps
  • Egg Yolks

  • Paprika

    1/4 tsp
  • Parmigiano Cheese (grated)

    1/4 cup
  • Heavy Whipping Cream

    2 oz
  • Vegetable Broth (or water and bouilllon)

    2 cups
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Wash and carefully clean the spinach. Peel and cube the potatoes.

Boil them in 2 cups of water for 15 minutes, stirring frequently.

Reduce them to a puree with the help of a blender and transfer again the pot. Adjust with salt and pepper.

Add the butter and the cubed potatoes. Season with the paprika

Add the vegetable broth, cover and let simmer on low-medium heat for about 30 minutes. Mix often.

In the meantime, grate the Parmigiano cheese and mix it in a bowl with egg yolks and heavy whipping cream. dd to the soup, stir well.

Add the Parmigiano cheese, egg yolks and heavy whipping cream to the soup and let simmer for additional 10 minutes.

Serve this yummy spinach soup topped with paprika and garnished with whole basil leaves.
