Ingredients:

  • Cucumbers (large)

    2
  • Fresh Salmon (skinless boneless chunk)

    1 12 oz can
  • Mayonnaise

    1/2 cup
  • Celery (chopped)

    1 cup
  • Green Onions (chopped)

    1/2 cup
  • Pickle Relish

    1/4

Cooking Directions:

Mix salmon, celery, and either or both of the onion and relish if desired, along with the mayonnaise.

Cut the cucumbers in half, lengthwise. Hollow out the seeds. You can mix them to the salad if you like.

Spoon the salmon salad into the hollowed out cucumbers and serve.


Tips:

Perfect when served with crackers, best with Vegetable Thins. You can top with dill weed and celery seeds.

Goes great with a mildly sweet white table wine, such as Trader Joe's Green Fin
