Fried Plantains - Recipe
Fried Plantains (or Platanos) are an easy and quick carribean recipe. Enjoy them with as a side dish or as a treat for your breakfast.

Peel, cut in halves and slice the plantains lengthwise.
In a large skillet, heat the vegetable oil. When hot, add the plantains and fry until tender and golden-brown colored.
Drain the excess of oil with some paper towels. Serve warm.
Over ripe plantains are preferred since they caramelize while cooking giving a sweeter result.
Green plantains are perfect as side dish. Just sprinkle them with salt before serving.
Best results are obtained using coconut oil or a lightly flavored vegetable oil for cooking.
