Zucchini Boats with Mozzarella Cheese and Anchovies - Recipe

After discarding the two ends, cut the zucchini lengthwise in two halves
Lay the zucchini in a large pan and cook in the microwave for about 15-20 minutes, until almost cooked.
Let the zucchini cool down a little.
Add to a large pan some oil and then lay the zucchini halves. Add on them an anchovies and 1/2 slice of mozzarella cheese.
Adjust with salt to taste
Put the zucchini in the oven at 400 F for about 20-25 minutes or until the cheese is melted and slightly browned
Take out of the oven and serve hot
If you do not have a microwave, cook the whole zucchini in boiling water for about 10 minutes or until the zucchini are almost cooked but not too soft
Mozzarella cheese can be substituted with any melting cheese of your choice
