Eggplant Bruschettas - Recipe

  • Eggplants

  • Tomatoes (peeled and diced)

  • Garlic

    2 cloves
  • Basil

    1 bunch
  • Extra Virgin Olive Oil

    to taste
  • Black Pepper

    to taste
  • Salt

Cooking Directions:

Wash and cut the eggplants in slices about 1/3 to 1/2 inch thick.

Place the eggplant slices on a tray and spread with abundant salt. Let them lose their bitter juice for about 1/2 hour. Briefly rinse them and dry with a paper towel.

Grill the thick sliced eggplants on both sides on a hot grill or griddle. Remove from heat and let cool for a while until warm.

In the meantime, cube in small pieces the fresh tomatoes, add the fresh basil and the chopped garlic cloves. Adjust of salt and pepper if desired.

Dress the eggplant slices with the garlic and basil flavored tomato cubes. Top with some extra virgin olive oil and serve. If you like garnish the Eggplant Bruschettas with some whole basil leaves.
