Ingredients:

  • Chicken (ground)

    1 lb
  • Black Beans

    1 15 oz can
  • Tomato Paste

    6 oz
  • Extra Virgin Olive Oil

    2 tbsps
  • Garlic

    3 cloves
  • Crushed Red Peppers

    to taste
  • Salt

    to taste
  • Water

    2 cups

Cooking Directions:

In a large skillet, heat the extra virgin olive oil and quickly saute the garlic for half a minute, stirring continuously.

Add the ground chicken and stir fry until it starts to brown. Add some crushed spicy red peppers, if desired.

In the meantime, drain the black beans, and set the liquid aside for later use.

Add the black beans to the ground beef in the pan and stir fry for about 5 minutes, stirring frequently.

Add now the tomato paste, one or two cups of water and enough of the black beans liquid previously saved to cover the beans. Mix very well.

Season with salt and pepper then lower the heat and cover with the lid.

Let cook the ground beef with black beans and tomato paste for about 20-25 minutes or until the liquid in the pan evaporates. Stir frequently and add some more water if necessary.

Toward the end of the cooking time, remove the lid and keep cooking on medium heat to reduce and thicken the sauce to the desired thickness.

Remove the pan from the stove top and serve the Ground Chicken and Black Beans with a side of steamed rice or mashed potatoes.


Tips:

If using dried beans, let soak overnight covered in water. Drain (discarding the liquid), wash and sort the beans before using them. You can speed up this process by quickly boiling for 10 minutes the beans in a pot, remove the pot from heat and let soak in warm water for at least one hour.
