Scrambled Eggs with Mint - Recipe
In this easy and quick recipe, the fresh flavor of mint turns simple scrambled eggs into a delicious meal. A great idea for a nutritious and high in proteins dish to enjoy for breakfast or dinner.

Wash, clean and chop the mint leaves.
Crack the eggs in a large bowl, season with salt and pepper and set aside without beating them.
Heat on low flame a non stick frying pan, greased with a thin layer of oil.
Quickly add the eggs.
Cook for few seconds allowing the white to set a little.
With a wooden spatula, scramble now the eggs to form soft curds. At this point add the chopped mint leaves and mix well.
Stirring constantly, cook until the eggs are cooked but not completely set. Leave them moist, they will keep cooking for some time after being removed from the pan.
Remove from the skillet and serve with toasts and bacon, ham or sausages for breakfast or with a side of hash browns or green salad for a great dinner.
For moister scrambled eggs, add some milk to the eggs and beat everything together before adding to the pan.
