Cooking Directions:
Heat a large non stick pan on low heat.
Add the butter and the whole green peppercorn drupes in the pan. Let the butter melt completely, without burning it.
At this point lay in the pan the pork loin medallions, increase the heat to medium and sear for five minutes on each side.
Lower the heat again and adjust of salt. If the meat is too dry, add one or two tablespoons of water (or milk).
Flip again the pork loin medallions, cover and let cook for 5 minutes per side.
Serve these delicious pork loin medallions immediately with your favorite side such as fresh green salad, french fries or mashed potatoes.
Tips:
Green peppercorn is made from the unripe drupes. It can be found either dried or pickled in most stores.
