Oven Roasted Pumpkins - Recipe
An easy recipe for a unusual winter pumpkin casserole. Oven Roasted Pumpkins can easily become your favorite side dish. Try it with acorn or butternut squash.

Clean the pumpkin and cut the flesh into small cubes.
In a large pan, melt the butter and add the pumpkin cubes for five minutes, stirring occasionally.
Adjust of salt and transfer in a baking pan.
Mix the beaten eggs with the pumpkin.
Bake at 400 F for about 30 minutes or until ready. Serve hot.
To clean the pumpkin, cut in a half and take seeds out with a spoon.
Acorn and butternut squash will give you the best results with this recipe.
