Orzo and Beef Broth Soup is a quick and very tasty recipe. It is perfect as starter or as a light dinner.

  • Onions (finely chopped)

  • Orzo Pasta

    1 lb
  • Unsalted Butter

    3 tbsps
  • Beef Bouillon

  • Salt

    1 tsp
  • Mozzarella Cheese (shredded)

    1/3 lb

Cooking Directions:

In a nonstick pot add the butter and the finely chopped onion. Saute for few minutes.

Add the beef bouillon and 4 cups of water.

When the water starts to boil add a teaspoon of salt and the Orzo pasta.

Let overcook the pasta for about 15 minutes or until it becomes very soft. Stir occasionally.

Pour the soup in 4 bowls and add the shredded mozzarella cheese. Gently stir the soup allowing the cheese to melt.

You can substitute the beef bouillon and the water with fresh broth for better results.
