Grilled Polenta Bruschettas - Recipe
Grilled Polenta Bruschettas are an original and terrific appetizer. On slices of grilled polenta, balsamic vinegar flavored red cabbages and sausages recreate a stunning mix of flavors for a great starter.

Prepare the Polenta as described in How to make Polenta ↪. Let cool and slice into 1 inch thick bites of the desired size.
Grill the polenta slices on a griddle until brownish on both sides. Lay the grilled polenta slices on a serving plate.
Garnish the polenta slices with some sliced red cabbage previously dressed with salt, pepper and Modena balsamic vinegar.
Cook the sausages on a skillet for about 5 minutes or until ready. Cut the sausages in small pieces.
Top the grilled polenta with the sausage pieces and serve, either warm or cold.
You can substitute the red cabbage with some shredded radicchio.
If you want, you may add some melting cheese on top of the prepared Grilled Polenta Bruschettas. Just warm them up in the oven before serving for a great result.
If you are short of time, you may used precooked polenta, commercially available in many groceries.
