Wash and clean the baby bok choy.
Heat a large pan, add the extra virgin oil. Wilt the minced onions until caramelized.
Add the cubed ham and saute for about 1 minute stirring continuously.
At this point add the baby bok choy and cook, covered, for about 10 minutes. Add a small amount water if necessary. Stir from time to time.
Remove the lid adjust with salt and pepper and let evaporate most of the water.
Add the melting cheese in small pieces and stir well.
When the Bok Choy are fully cooked and the cheese melted remove from heat and serve hot.
