  • Chicken Broth (optional)

    1 cup
  • Hot Habanero Peppers (optional)

Cooking Directions:

Wash and clean the chicken legs. Finely slice the onions. Wash and cut in large stripes the red bell peppers.

Heat a large pan, add the extra virgin olive oil and caramelize the sliced onions on high heat.

When the onions are wilted, add the chicken legs and sear them very well on all sides.

Add then the striped red bell peppers and stir well, lowering the heat after 1-2 minutes.

Season the meat and veggie stir fry with fresh cilantro, salt and pepper.

Add some water or chicken broth. If desired add a whole habanero pepper, but remember to remove it before serving the chicken.

Cover and let cook for 30 minutes on low heat, stirring from time to time.

Uncover and keep cooking at low heat for additional 10 minutes allowing the water in excess to evaporate.

When ready remove from the pan and serve each chicken leg with the bell peppers and onions as side. If desired, garnish your dish some steamed rice.
