Cooking Directions:

Wash and clean the arugula and let it dry.

Trim the pork loin by removing all the fat in excess from it.

Roll cut the pork loin to obtain a single 1/2 inch thick single steak. If you are not sure how to roll cut the pork loin follow the directions provided below. Otherwise, ask your butcher to roll cut the pork loin for you.

DIRECTIONS: How to roll-cut a pork loin

Place the trimmed roast on a cutting board. With the use of a sharp knife begin cutting about 1/2 inch from the board on the longer side of the loin. Stop the cut about 1/2 inch of the end of the pork loin. As you keep cutting the 1/2 inch steak, "unroll" the roast as you do with a carpet.

Once you have obtained a single flat pork loin steak 1/2 inch steak you can, if desired, use a meat tenderizer to flatten it even more evenly.

Start filling the roll cut pork loin by adding the sliced cheese. Leave at least a couple of inches at one end of the pork loin to avoid the stuffing from falling out when rolling it up.

Similarly, add a layer of sliced cooked ham and a layer of arugula.

Roll the stuffed pork loin with the help of your hands.

Tie the stuffed pork loin with a string to both keep the pork in a pleasant round shape and to hold the stuffing while cooking.

If not cooked immediately, wrap the tied stuffed pork loin with paper towels and place in the fridge for up to 24 hours.

Transfer the Pork Loin Roll Stuffed with Ham, Cheese and Arugula in a lightly greased pan and place in the preheated oven at 400F for about 40-45 minutes or until the internal temperature reaches 140-150F.

When fully cooked, remove from the oven and let cool a little before proceeding to the next steps.

Cut the pork loin roll in thick slices (about 1/2 inch).

In a large non stick pan, melt some butter and quickly cook the sliced pork roll on the stove top for a seared, tastier finish. Season with salt and pepper to taste.

Serve with a side of mashed potatoes, steamed rice or green salad.
