Ingredients:

  • Tomatoes (San Marzano or Roma)

    3 lb
  • Garlic

    2 cloves
  • Onions

    1/2
  • Extra Virgin Olive Oil

  • Basil Leaves

  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Wash and clean the tomatoes. Cut in halves, discard the thick parts and the seeds.

Transfer the tomatoes in a large non stick pot.

Cover and cook slowly at low heat stirring from time to time until they wilt completely.

Strain the wilted tomatoes with a tomato strainer/crusher. Set aside.

While cooking the tomatoes mince onion and garlic. Wash and chop the basil.

Heat a non stick pot. When hot add the extra virgin olive oil, then the onion and the garlic. Cook for 5 minutes or until the onion golden.

Add the sifted tomato sauce, adjust of salt and pepper. Cover and let simmer for 20 minutes at low heat stirring occasionally.

Add the basil leaves at the very end to preserve the full flavor unaltered.

Your homemade traditional tomato sauce is ready to be used to dress the pasta or as a base for many different dishes including pizzaiola dishes, Bolognese Sauce and many more.
