Ingredients:

  • Pork Loin

    1 lb
  • Red Cherries

    15 oz can
  • Onions

    2
  • Porto Red Wine

    1/2 cup
  • Unsalted Butter

    1 oz
  • Thyme

    to taste
  • Marjoram

    to taste
  • Juniper

    to taste
  • Pink Pepper Corns

    to taste
  • Salt

    to taste

Cooking Directions:

Wash, dry and chop the onion in large pieces.

In a large pan, melt the butter and cook the Pork loin for a few minutes on each side until slightly brown. Let chill.

Place the pork loin in a large baking pan and surround with onions and unsweetened pitted red cherries.

Dress with al the herbs and spices. Sprinkle with the Porto wine, with the cooking juices from the pan and some of the cherries juices.

Cook in the oven at 400 F for about 60 minutes.

Serve hot with the side of the oven baked cherries and onions.


Tips:

To highlight the taste of the pork loin you can cut small slits in the meat using a knife or, even better, a skewer and fill the holes with the herb mix.

If you use fresh cherries boil them first and set apart the boiling water to moist the pork loin.

If to dry consider adding more Porto wine or Cherry juice to the pork roast while cooking.
