Heat the water in a large pot. When boiling, add the salt and the tagliatelle pasta. Cook until al dente.
In the meantime, in a skillet, melt the butter at low heat and add the whole sage leaves. Adjust with salt to taste and add the grated nutmeg if desired.
Drain the tagliatelle pasta and transfer in the large skillet. Saute for half a minute with the butter and sage sauce, stirring continuously.
Serve hot, garnishing with some whole sage leaves in each plate
