Ingredients:

  • Fettuccine Pasta (fresh)

    1 lb
  • Ricotta Cheese

    4 oz (see recipe ↪)
  • Cherry Tomatoes

    1 lb
  • Capers

    3 tbsps
  • Basil Leaves

    1/3 cup
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

In a large pot, bring to boil enough water to cook the pasta. When boiling, add salt and the fettuccine. Let cook until al dente as directed on the package.

In the meantime, wash and cut in halves the cherry tomatoes. Transfer them in a large serving bowl.

Drain the capers and add them to the tomatoes.

Add the fresh ricotta cheese to tomatoes and capers and mix well. Adjust with salt and pepper if necessary.

When the pasta is ready, drain and add the fettuccine to the sauce. Mix well to dress uniformly the pasta. Add some fresh basil leaves, keeping some for garnish the pasta.


Tips:

You can substitute capers with green or black olives for a smoother, milder taste.
