Stir Fry Zucchini - Recipe
An easy, quick and healthy way to stir fry delicious Zucchini. With few basic ingredients you will be able to prepare a yummy side dish that is perfect to accompany any kind of entree.

Wash the vegetables. Cut the zucchini in thin slices with a knife or with the use of a food processor. Mince the garlic.
In a large non stick skillet heat the oil and quickly saute the garlic until lightly brown.
Add in the pan the sliced zucchini, stirring continuously.
Let cook the zucchini on medium high flame for at least 5-10 minutes, mixing often to prevent them from sticking to the bottom of the pan.
When the vegetables are wilted (after 5-10 minutes) lower the heat, cover the pan and let cook for additional 5 minutes.
When the stir fry zucchini are fully cooked, season with salt and pepper and serve hot.
Spice up this stir fry zucchini recipe by adding some crushed red peppers to the saute.
