Grilled Vegetables - Recipe
A healthy and delicious recipe for a light side dish. The taste of Grilled vegetables is highlighted by the cooking process and the marinade. Perfect served either hot or chilled.

Wash the vegetables. Cut the fresh Anaheim red peppers in 2 halves. Cut The Onions in 4 slices. Cut the zucchini in large slices. Cut the Red Endive in 2 halves.
Lay the vegetables on the hot grill and cook them for about 5 minutes. Flip the vegetables and cook for another 5 minutes.
In a small bowl prepare a marinade mixing the finely chopped garlic, the extra virgin olive oil, the lemon juice, salt and pepper.
Let marinade the vegetable for at least 10 minutes before serving.
You can add to the grill any vegetable you like. Keep in mind that onions cook more slowly than red peppers and the red endive. Zucchini, tomatoes, and eggplants cook faster so they should be removed from the grill earlier.
