Oven Baked Red Bell Peppers Stuffed with Eggs are a delicious, nourishing and tasty meal. Surprisingly easy to prepare, these yummy bell peppers are perfect when served a as main dish for either breakfast or dinner accompanied by steamed rice, beans or with a lightly dressed mixed green salad.

Ingredients:

  • Red Bell Peppers

    4
  • Eggs

    4
  • Mozzarella Cheese (Optional)

    2 slices
  • Salt

    to taste
  • Black Pepper

Cooking Directions:

Cut lengthwise the red bell peppers. Remove the white part, the seeds and the stem. Wash and drain well.

Beat the eggs with a fork to mix well whites and yolks. Adjust of salt and pepper.

Lay the bell pepper halves in a greased baking pan and pour some of the beaten eggs into each half.

If desired add half slice of mozzarella cheese on top of the beaten eggs.

Bake in the preheated oven at 400F for about 40 minutes or until the top starts to brown. Broil for 5 minutes on high if necessary.

When ready, remove from the oven, transfer on serving plates and serve immediately. Perfect for breakfast or dinner with steamed rice, a green salad or refried beans.


Tips:

You can customize this recipe adding steamed rice and beans to the eggs and use the mix for the stuffing.
