Saute of Zucchini and Mushrooms - Recipe
This Saute of Zucchini and Mushrooms is a simple and delicious recipe to enjoy as a side for meat dishes or as a standalone yummy vegetarian meal. Healthy, colorful and light, this stir fry is a perfect choice for dinner!

Cooking Directions:
Wash and clean the vegetables. Cut the zucchini in thin slices with a knife or with a food processor. Slice the mushrooms and mince the garlic.
In a large non stick skillet heat the extra virgin olive oil and quickly stir fry the garlic until lightly brown.
Add in the pan the sliced zucchini, stirring continuously.
Let cook the zucchini on medium-high flame for 5 minutes, stirring often to prevent them from sticking to the bottom of the pan.
At this point, add the sliced mushrooms and keep stirring occasionally for about 5-10 minutes.
When the vegetables are wilted lower the heat, cover the pan and let cook for other 5 minutes.
When both the zucchini and the mushrooms are fully cooked, season with salt and pepper and serve hot.
Tips:
Spice up this recipe by adding some crushed red pepper together with the garlic.
In this recipe Crimini mushrooms are used but they can easily exchanged with most kind of mushrooms such as Shitake, Oysters or champignons.
