  • Cauliflowers

    1 head
  • Ham

    6 slices
  • Homemade Tomato Sauce

    14 oz (see recipe ↪)
  • Garlic

    1 clove
  • Italian Parsley

    to taste
  • Extra Virgin Olive Oil

    2 tbsps
  • Salt

    to taste

Cooking Directions:

Cook the cauliflower head in pieces by either boiling or using a microwave. Drain well and let cool when ready.

In the meantime, bring to boil enough water and cook the pasta until al dente. Drain when ready

In a large saucepan, heat some extra virgin olive oil. Briefly sauté the chopped garlic and the striped slices of ham.

Add to the saucepan the boiled cauliflowers and let them sauté for about one minute.

Pour the Homemade Traditional Tomato Sauce (or your choice of canned tomato sauce) and some water if necessary. Adjust of salt.

Cover and let sim for about 10 minutes at low heat.

Dress the pasta with the Cauliflowers Tomato sauce and top with chopped Italian parsley.


To boil the cauliflower head with the microwave: After having reduced in pieces and washed the cauliflower place it in a big enough microwave-safe dish. Add 1/2 inch of water. Cover with plastic wrap and cook on high for 2-3 minutes per cauliflower cup, or until cooked. The plastic wrap should not touch the food. Make some small holes with a toothpick to allow the steam to escape.
