Pork Loin Medallions with Caramelized Onions and Capers - Recipe
In this delicious recipe the smooth taste of caramelized onions and the piquant flavor of capers well match these tender pork loin medallions resulting in a tremendous meat dish for an outstanding dinner. Serve with mashed potatoes or a mixed green salad.

Cooking Directions:
Wash and clean the vegetables. Cut the onions in very thin slices. Finely chop the celery.
In a large skillet heat on high flame the oil and stir fry celery and onions, stirring continuously until lightly caramelized.
At this point lower the heat, season with salt and pepper and add some hot crushed red peppers if desired.
Add the capers along with 2 tablespoons of water and stir well.
Place the pork loin medallions in the pan with the caramelized onions and cook thoroughly on both sides, about 7 minutes.
When the pork loin fillets are fully cooked remove them from the pan and lay them on a warm serving plate.
Thicken the caramelized onion, caper and celery sauce in the pan by adding some sifted flour while stirring on low heat.
Spoon the reduced sauce over the pork loin medallions and serve with a side of mashed potatoes or a mixed green salad.
