Ingredients:

  • Spaghetti Pasta

    1 lb
  • Onions (white)

    3
  • Anchovies Fillets in Olive Oil

    4 tbsps
  • Salt

    to taste
  • Extra Virgin Olive Oil

Cooking Directions:

Shred the white onions and cook them on low heat and very slowly with Extra Virgin olive oil and 1/2 cup of water for about 190 minutes, stirring from time to time. Check often that the onions are still moist. If too dry, add some water.

Once the onions are fully cooked, add the anchovies and mix very well. Let cool down.

In a large pot, bring to boil enough water to cook the spaghetti pasta. When at rolling boil, add salt to taste and the pasta and cook until al dente, following the instructions on the package.

When the pasta is ready, drain, chill the pasta under cold running water and then mix with the white onions sauce before serving.
