Ingredients:

  • Spaghetti Pasta

    1 lb
  • Capers (optional)

    2 tbsp
  • Anchovies Fillets in Olive Oil

  • Bread Crumbs (optional)

    2 tbsps
  • Onions

    1 large
  • Extra Virgin Olive Oil

    4 tbsps
  • Salt

    to taste

Cooking Directions:

Cut the onion in long thin strips.

In a large pan add the onions and enough water to cover 3/4 of them. Stirring occasionally boil until there is almost no water left. Add also some capers if desired. To wilt the onion it should take about 15/20 minutes.

Add the whole anchovies fillets and the olive oil. Cook for 2 minutes or until the anchovies melt.

Bring 4/6 quarter of water to a rolling boil. Add 3 tablespoon of salt (better if coarse) and the spaghetti pasta. Let cook until Al Dente stirring frequently.

Drain well the pasta and mix with the sauce. Serve hot.


Tips:

The anchovies and onion sauce has to be juicy. If too dry add some more olive oil or 2/3 tablespoons of water.

We suggest to use Thick Spaghetti or Linguini pasta for a better result.

Pouring few tablespoons of bread crumbs when dressing the pasta will add a crunchy touch to this recipe.

Add some grated Parmigiano cheese before serving if desired.
