Cooking Directions:

In a small pot, bring to boil some water with the vinegar. Boil the quail eggs for about 6 minutes. Remove and cool in cold water.

In the meantime, peel, wash and shred the potatoes. Add salt and pepper.

In a large pan add the two tablespoons of extra virgin olive oil. Shape the shredded potatoes into four balls and lay them in the pan. Cover and let cook for about 4 minutes on medium heat.

At this point, add 1/2 cup of water and cook for additional 10 minutes. Add more water if necessary.

Uncover and let evaporate the remaining water.

Keep cooking until the bottom is brown and crispy and flip each ball. You can now adjust the shredded potato balls to form four 1 inch high nest-shaped discs. Cook for another 5 minutes or until the lower side is brownish.

Remove with a spatula and lay on a serving plate. Dig a small space in the center of each shredded potato disk to resemble a nest.

In a small skillet saute the striped ham until crispy.

To serve, arrange the strips of ham around the shredded potato nests and place the quail eggs within the nests.


You may replace the ham with crispy bacon or prosciutto.

If you want to adapt this recipe to use chicken eggs, you can make a huge nest and lay within the peeled eggs.
