  • Red Bell Peppers

  • Coconut milk

    1 cup
  • Onions

  • Garlic

    1 clove
  • All Purpose Flour

    1 1/2 tbsps
  • Oil

    2 tbsps
  • Allspice

    to taste
  • Black Pepper

    to taste
  • Salt

    to taste

Cooking Directions:

In a heavy nonstick skillet, sauté the chopped onion and garlic with some oil.

Add chicken fillets or breast pieces (according to your preference)and brown lightly.

In the meantime rinse and clean the red bell pepper. Cut in large pieces and add to the pan. Cook briefly.

Pour the coconut milk, cover and let simmer at low heat for 15 minutes or until the chicken is tender, stirring occasionally.

Adjust of salt and pepper and, if desired, sprinkle with ground allspice nut.

When the chicken is ready, remove the pieces and set apart. Add 1 or 2 tablespoons of sifted flour to reduce the sauce in the pan. When the desired consistency is reached, pour the sauce on top of the chicken pieces and serve.


You can substitute coconut milk with half cup of coconut cream and half water.
