Fettuccine Rigate Pasta with Pesto Ricco - Recipe
Fettuccine Rigate with Pesto Ricco is a tasty variation for the well known Italian Pesto Sauce. Pesto Ricco (Rich Pesto) lets you enjoy the basil and pine nuts flavor mixed with green beans and potatoes for a successful and tasty sauce.

Boil the peeled and cubed potatoes for about 20 minutes or until ready. Let them cool down and reduce in smaller pieces if desired. We suggest 1/2 inch sized cubes.
If you are using fresh green beans, wash and boil them until tender. If canned, drain them well.
In a large pot bring to a rolling boil abundant water. Add the salt and wait until the water restart boiling.
Sim the Fettuccine Rigate pasta and let cook until al dente or as instructed in the box, stirring from time to time. Drain them well.
In the meantime, prepare the Pesto Sauce ↪ as described in the link and mix to your traditional pesto the green beans and the potatoes.
Dress with the pesto ricco sauce and serve immediately.
