Preparing the Homemade Tomato Sauce:

Wash, clean and cut in halves about 1 lb of tomatoes. Cook the tomatoes on slow heat until they wilt. When the tomatoes are fully cooked, strain them with a tomato strainer/crusher.

In the meantime, chop 1/4 onion and 1 clove of garlic. Saute in a large skillet with 1 tablespoon of extra virgin olive oil and add the sifted tomatoes. Cover and let simmer on low heat for about 20 minutes. Your tomato sauce is ready to be used.

NOTE: Save one hour by using a canned or jarred tomato sauce. Preferably choose one kind without added flavors or spices.

Preparing the Tomato and Bread Soup:

In a large stock pot heat 3 tablespoons of olive oil and saute the minced garlic.

When the garlic starts to turn brown, add the white bread slices in pieces and saute briefly, while stirring.

Add the tomato sauce and the broth to cover completely the bread. Add some additional water if necessary. Stir well.

Lower the heat, cover and let cook for 40 minutes or until the bread is completely melted stirring from time to time.

Serve hot, if desired top with extra virgin olive oil, cheese or a tablespoon of table cream.


Tips:

This recipe is great for using bread leftovers from the day before. White bread can be substituted with your favorite one such as ciabatta or matza bread.
